Sweet Potato Black Bean Chili

Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 large sweet potato, peeled and cubed

  • 1 red bell pepper, diced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) diced tomatoes

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • Salt and pepper to taste

  • Optional toppings: avocado slices, chopped cilantro, lime wedge

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and fragrant.

  2. Add the sweet potato and red bell pepper, cooking for about 5 minutes until they begin to soften.

  3. Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer.

  4. Cover and let cook for 20-25 minutes, or until the sweet potatoes are tender.

  5. Serve hot, garnished with your choice of toppings.
