Sweet Potato Black Bean Chili
Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 large sweet potato, peeled and cubed
1 red bell pepper, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Optional toppings: avocado slices, chopped cilantro, lime wedge
Directions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and fragrant.
Add the sweet potato and red bell pepper, cooking for about 5 minutes until they begin to soften.
Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer.
Cover and let cook for 20-25 minutes, or until the sweet potatoes are tender.
Serve hot, garnished with your choice of toppings.
